Chicken Bone Broth Egg Drop Noodle Soup

That’s a long title but it’s worth it.  It’s a cool dreary day, I am surrounded by people who are sick and I need something hot for lunch.  In my fridge there is a jar of chicken stock I defrosted out of my freezer yesterday….the solution is obvious but to be truthful, as much as I expound the virtues of chicken broth to anyone who will listen, I don’t actually love the taste of it.  And so begins the exercise of “jazzing up” my broth.  10 minutes or so later I am gazing upon the most beautiful looking and smelling bowl of soup I have created in a long time – here’s how you can do this for yourself:

Ingredients

  • *2 cups Chicken Broth from your freezer or make it fresh if you have the time and are out
  • 1 green onion chopped
  • 1 small piece fresh ginger root peeled (about 1/2″)
  • 1 small piece fresh Tumeric root peeled (1/4″)
  • a handful of kelp noodles – probably about 1/2 cup
  • 1/4 cup shredded zucchini (it was sitting in my fridge waiting for a purpose – if you have none you could sub in any greens you have on hand)
  • 1 egg well beaten
  • 1-2 TBSP Fresh squeezed lemon juice (based on your taste)
  • Dash of coconut aminos (kinda like Tamari without the soy beans and wheat)

How To

  • Bring the broth, ginger, turmeric, tamari, green onion and lemon juice to a boil, drop in the zucchini (or greens) and kelp noodles, cover and lower heat to simmer.
  • When noodles are tender (maybe 2-3 minutes) carefully but vigorously stir your soup and drizzle in the beaten egg
  • Cook while stirring for a few more minutes and done!

Health benefits

  1. Chicken soup makes you feel good
  2. Chicken soup is actually immune boosting (your Mom, Grandma etc were right!)
  3. Bone broth is good for your bones
  4. Ginger and Tumeric are fabulous sources of ant inflammatory compounds
  5. Great for digestive health
  6. Kelp noodles are a great source of trace minerals without gluten or nasty “gluten replacing” compounds
  7. eggs are a fab source of healthy fat and protein (as is the pastured chicken you used to make the broth)
  8. greens are a great source of folate, magnesium and all kinds of vitamins and minerals
  9. Lemon juice is a great source of vitamin C and, like bone broth is alkalizing to the body
  10. And there is NOTHING more comforting than a steaming bowl of chicken noodle soup

Alternatives

  • If you are vegan you can still enjoy hot soup with a multitude of health benefits just buy organic naturally fermented Miso and spruce it up as above…..just don’t add the miso until you have removed the soup from the heat (in other words do not cook the Miso) or you will lose most of its health benefits.
